The Yacon Syrup and Why You Should Find It Useful
The Yacon syrup is traditional caramel made from the sap of the yacon plant. Traditional methods of making it were last century utilized involving the sap being boiled off, travelled to France and then caramelized there. In the latter case, the process was improved upon through the utilization of Potassium Ferrocyanide. This process was comprised of adding Potassium Ferrocyanide to sap prior to its boiling process. The process seems to have extraordinarily been effective with the addition of 10% of the sap to the boiling process being adequate to preserve the integrity of the vitamins and minerals.
